How has your weekend been? I hope you managed to cross some things off your to-do list, or just enjoyed some peace and quiet. I am posting our week recap and a meal plan for the upcoming week. Feel free to skip to the bottom of the page to see the meal plan. I am planning to cook four nights, and one night to be leftovers.
Since Valentine’s Day is on Tuesday this year, we will be eating in. I am going to prep most of it on Monday night and bake on Tuesday after work.
This week’s meal plan
- Leftovers: pizza and wings, left over from the Sunday night Super Bowl
- Valentine’s dinner in: crab cakes, steak, scalloped potatoes, asparagus
- Stuffed pasta shells (from previous week’s meal plan as I didn’t get to it)
- Pierogi, kielbasa, sautéed cabbage
- Salmon and spinach in puff pastry: I am going to be using this recipe, using puff pastry instead of filo because my store didn’t have it.
Out and about
This week’s highlights included Friendship Dance at Phoebe’s school which was more of a Friendship Social as they had different organized activities and games for the kids. I don’t have good pictures to post because it was very crowded and not great for taking pictures. But we did have a good time and Phoebe participated, although she was overwhelmed at the beginning. We didn’t stay very long and made a quick stop at a store to get Valentine’s cards for her class, as well as a special gift she wanted to give to her best friend. I was glad she didn’t ask for one for herself, as we are running out of space in the stuffed animal department.
Today was a beautiful sunny day, and Phoebe and I stopped at a park after her piano lesson to admire a tree fort someone built out of the fallen trees after the recent ice storm. The tree debris are everywhere in our area, and it’s heartbreaking. Lots of mature trees have been destroyed.
Organization
A quick organizing project (by quick I mean 20 seconds). I replaced an organizer in my bathroom makeup drawer with two separate baskets. The old organizer worked fine but was a bit narrow. These $1.5 baskets fit the space much better and make it super easy to access my (minimal) makeup in the morning.
Cooking
I ended up not making stuffed pasta shells from my meal plan last Friday but opted for this easy Spaghetti Carbonara. This is my go to recipe for carbonara – it’s so easy, and is a huge crowd pleaser. Authentic carbonara doesn’t have cream in it – the sauce includes eggs, bacon (or pancetta, but I usually sub bacon) and parmesan.
This afternoon included the usual school and meal prep. These egg bites are a Starbucks copycat. I made the recipe as written a couple of times, but this time skipped the water bath and used cheddar instead of Gruyere. I found that water bath makes them soggy.
We are ending Sunday with the Super Bowl “party” of homemade pizza and wings. I usually make two pizzas, using my two Lodge cast iron pans. We made a bbq and a Margherita pizza this time.
