Here is a quick and easy dinner idea for when you have no time to cook. These turkey Brie sandwiches with apples and honey mustard sauce are really good. If you are not a fan of Brie, they are also good with cheddar or any other cheese you like. They are also very versatile – beef and swiss or provolone is a nice combo. Pears can be used instead of the apples, and a slice of bacon would be a nice addition. I am listing approximate quantities – adjust based on what you have and how many people you are feeding.

Here is how to make these Turkey Brie sandwiches.
Ingredients
- Ciabatta rolls
- Honey Mustard sauce (see below)
- 1 large apple, sliced
- Deli turkey (or use other deli meat if you prefer)
- 5-6 oz Brie, sliced
For the Honey Mustard sauce
- 2 Tbsp mayonnaise
- 2 Tbsp honey
- 1 tsp cider vinegar or white wine vinegar
Instructions
Combine the ingredients for the Honey Mustard sauce. Split the rolls horizontally and smear with Honey Mustard sauce.
Layer the cheese, deli turkey, and apples over the sauce. Place the top parts of the roll over the apples and (a) serve as is, or (b) wrap in foil and warm in a preheated 350 F oven for about 10 minutes.

It feels like we’ve been living in an “emergency” mode for so long. There is a certain routine to our days now that the remote learning has been in session for a few weeks. Everyone seems to be trying to embrace it and do their best but, of course, the level of frustration and the feeling of helplessness is higher than it would normally be.
Current “gym” situation
The older kids have their school stuff in their rooms and are pretty much self-sufficient with their learning. Phoebe is set up in the dining room, right next to Brian’s and mine shared home office. This way one of us can keep an eye on her whenever we have a minute.

The COVID situation has been one of the most challenging things to deal with, mostly mentally. Seeing various responses and attitudes from the people I know, seeing my friends getting sick, the way it’s driven by politics and not common sense, is disheartening.
