This is another super quick, easy, and customizable dinner idea. It really is more of a concept than a recipe – feel free to use more or less of the ingredients, or substitute with what you like. I’ve made this chicken enchilada skillet with leftover chicken and with canned chicken, and I am sure ground turkey would work fine. This dinner comes together in 20 minutes, faster than getting a take-out or delivery. Here is how to make it.
Ingredients:
- 1 onion, chopped
- 1 bell pepper, any color, chopped
- a pinch of salt
- 1 cup of sliced mushrooms
- 1 15 oz. can of black beans, drained and rinsed
- 2 12 oz cans of chicken breast, drained (about 1 lb. cooked chicken meat.)*
- 1 can of your favorite enchilada sauce
- 1 tsp cumin
- 0.5 tsp dried oregano
- 1 cup of corn chips, or 2 small corn tortillas, torn into pieces
- 1 cup shredded cheddar
- fresh cilantro (optional)
Instructions:
Saute the onion on medium-high heat for about 5 minutes until softened. Add the bell peppers and mushrooms, and saute for another 5- 7 minutes. Salt lightly (mind that the canned beans, chicken, and enchilada sauce are salty).
To the vegetables, add the drained beans, chicken, enchilada sauce, as well as the cumin and oregano. Give everything a good stir to combine. Cook for a few minutes until hot and bubbly.
Top with the corn chips or tortilla pieces and shredded cheese. Put the lid on, turn off the heat and let the cheese melt for a couple of minutes. Sprinkle with chopped cilantro before serving
That’s all there is to it. We like to serve this quick chicken enchilada skillet meal with some avocado, sour cream, chopped green onions, pickled jalapenos or/and salsa (this one is our favorite).

*I like Costco brand Premium Chicken Breast
Substitution options
In the recipe above I used mushrooms and bell peppers but zucchini, yellow, or corn would work great as well. Any kind of beans can be substituted for the black beans. The same goes for the cheese: Monterrey, Colby, a Mexican blend are all fine options. Feel free to go lighter or heavier on the corn chips and cheese – it’s your call!
