How has your weekend been going? I hope you are enjoying the summer weather and taking some time to rest. We are cooking Lobster Scampi with a Blueberry Galette for dessert. On weekends we have the time to make more involved meals like this. On weeknights, it’s all about having an easy meal on the table fast. I am sharing a few of the easy weeknight dinner ideas if you are looking for inspiration.
Monday:
.I’ve made this salad a few times. It’s a great option when you are looking for a light but substantial salad. The original recipe is here. I plan to use fresh tomatoes and add grilled chicken.
Tuesday: Pesto salmon with oven roasted cauliflower
The salmon and the cauliflower conveniently roast at the same temperature, 4oo F. Start with the cauliflower: separate into florets, drizzle with oil (I use canola), season to taste. We usually use salt and pepper and garlic powder. This can be done on the roasting sheet, to save on clean up. Put in the preheated oven for 20 min. Meanwhile prep the salmon: on a roasting sheet put the salmon, season with salt and jarred pesto. After the 20 minutes are up, put in the oven for 10 minutes. The salmon and the cauliflower should be done at the same time.
Wednesday: Beef stroganoff with ground beef
I usually eyeball this but here is a good recipe to follow along. I never use mushrooms in my beef stroganoff – not in a regular type, not in the ground beef version. I grew up eating beef stroganoff in Russia and it was never made with mushrooms.
Thursday: Meatball subs, salad
Thursdays are usually very busy so the dinner needs to be super quick. We’ll be using pre-cooked frozen meatballs and jarred marinara sauce. We’ll layer the hoagie buns with the sauce, reheated meatballs, mozzarella, and some pesto, and broil to melt the cheese.
Friday: Bruschetta chicken with steamed broccoli.
I am pretty sure I’ll be eyeballing this but I like this recipe as a starting point. My “garden” has a nice looking basil plant that I managed to keep alive, and we have good summer tomatoes. Looking forward to this meal.
